The Best Vegan Spaghetti Sauce

My father’s secret recipe, in vegan form!

Ingredients

  • 3 Broccolis, chopped
  • 1 “big” package of spinach
  • 3 bell peppers
  • 2 packages mushrooms
  • 1 can crushed tomatoes
  • 2 cans tomatoes paste
  • 1 head celery, chopped
  • 1 large yellow onion
  • 1 bunch fresh basil
  • 2 cups dried red lentils
  • 4 cups water
  • 650 mL tomato basil pasta sauce
  • Extra virgin olive oil
  • White miso paste
  • Nutritional yeast
  • Salt
  • Pepper
  • 2 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 2 tbsp date powder

Directions

  1. Heat a large saucepan with olive oil on medium heat
  2. Add celery, onion, garlic, mushrooms. Cook until softened
  3. Add pepper and all remaining ingredients except broccoli, spinach, nutritional yeast
  4. Simmer for 1 hour
  5. Add broccoli, spinach and nutritional yeast. Cook for another 30 minutes.
  6. Adjust salt, pepper and date powder to taste.
